First Look: Guerrilla Street Food on The Loop

March 9th 05:03pm, 2018

Guerrilla Street Food’s Filipino-inspired fare is sweeping St. Louis, with a fourth location to open Tuesday, March 13 at 6120 Delmar Blvd. on The Loop.

“Delmar was one of my must-have spots I wanted to have a place,” said co-owner Brian Hardesty. “I’ve been coming down here since the early ’90s. … It’s really nostalgic for me, and the same for my business partner (Joel Crespo).”

The 2,100-square-foot space will seat 48, with the soon-to-open patio adding about another 30 seats. It joins the original food truck, the first brick-and-mortar at 3559 Arsenal St., and the GSF kitchen inside 2nd Shift Brewing on The Hill. A fifth location inside Tropical Liquors in The Grove is also slated to open this year.

Much of the menu will be recognizable, but along with fan-favorites like chicken adobo and the Flying Pig, the new location will feature 22 new dishes available only at that location. With executive chef Heidi Hamamura in the kitchen, Hardesty said they can experiment with flavors and techniques, pushing the boundaries of what people expect. Look for colorful plates like kinilaw (a Filipino raw seafood dish similar to ceviche), sour fried chicken and pininyahang seitan (a pineapple-marinated version of the popular wheat-based meat substitute).

“We want to keep people entertained,” Hardesty said. “I like to think with this particular menu there are a lot of flavors people aren’t familiar with.”

The restaurant is opening without a liquor license, but Hardesty plans to serve local and Filipino beer and wine as soon as possible.

GSF will be open Monday to Saturday from 11 a.m. to midnight and Sunday from 11 a.m. to 10 p.m. Here’s a first look at the latest eatery on The Loop.
