1 cup red rice
2 cups chicken broth
3/4 cup blueberries
3/4 tsp. freshly ground cardamom (pods removed)
Sugar and cinnamon to taste
• Rinse red rice in cold water.
• Fill a small pot with 2 cups of chicken broth. Add the red rice, blueberries, sugar and cinnamon. Bring to a boil. Cover and simmer for 30 minutes until liquid is absorbed.
• Serve with roasted lamb or curried chicken.
